The Canberra Distillery Dry Gin

Vapour distillation in gin is a superb way to get a clean and focused botanical profile. Each botanical used in this dry gin has an evident persistence. On the nose, it presents with a cacophony of intriguing citrus characteristics, leaning more into citrus leaves, woody elements, and myrtles, with a fresh citrus flesh profile rather than a citrus oil. There is also an element of sweet anise and woodland herbs flowing through. The crisp citrus bursts through on the palate, before levelling out with more herbaceous, dessicated grassy notes and a hint of pine. The finish wraps around with sweet ripe berries, creating a lovely, round finish.
