Domaine Defialy

Domaine Defialy is the sequel to butcher-turned-winemaker Micah Hewitt’s negociant label Defialy (an acronym of the phrase ‘don’t ever forget I’ll always love you’), launched in ’22 to distinguish the wines grown on his organically farmed 3.7ha Candlebark Hill vineyard from those made with purchased fruit. While his approach is slightly more traditional here – there’s a focus on single-varietal wines, and the occasional use of new oak – the wines are still made with 'minimal fuckery' to express site, season and his viticultural efforts, and they radiate charm and personality. -ANNA WEBSTER
