Paul Flowers says production depends ‘on the frost, wind and birds', which perhaps explains why this is very much a part-time venture. Situated 7km west of Maryborough, Tipperary Hill Estate is the only winery operating in the Central Goldfields Shire. Paul built the rough-cut pine winery and the bluestone residential cottage next door with the help of friends. -JAMES HALLIDAY
