Our Review

Pare Wines is a collaborative project born of the friendship between winemaker Ansel Ashby and wine merchant Andrew Williams. Hailing from Colorado, Ansel has worked vintages in Martinborough, the Adelaide Hills, the Great Southern, and at Soter in Oregon’s Willamette Valley. He has a Masters in Viticulture and Oenology from the University of Adelaide. Andrew met Ansel while the latter was working at the legendary Ed Cellars in Adelaide and the former lived nearby and was working for a key wholesaler. A likeminded appreciation for wines that spoke of place, unburdened by artefact led to a COVID-era plan to make wines from local sites that could do just that. Today, the duo both work hand in glove on every aspect of the business, from sourcing prime fruit through to making and distribution. The label's foundation on vineyards ideally suited to variety currently sees a suite of McLaren Vale grenache and an Adelaide Hills chardonnay from the Bowyer Ridge vineyard, with the wines made in a gentle way, to coax and frame but never occlude the primacy of site. -MARCUS ELLIS
