Founder and winemaker Tyson Bitter has hadnearlytwodecadesofexperienceinthewine industry, from vineyards to the cellar, to assistant winemaker and cellar manager, and now - after finishing a wine science degree at CSU - has decided to start his own business. Slain Giant Wines takes its name from the story of the Kaurna people who named SA's Mount Lofty Ranges Yurrebilla after a dreamtime giant ancestral figure who travelled from the mountains to the east to attack the tribes through the plains. Yurrebilla was slain, and back in real time,Tyson is slaying all the current ideas about winemaking. Thus his wines are a blend of vintages, varieties and/or regions. Just to complicate the picture, the Medium Bodied Dry White does have a vintage. -JAMES HALLIDAY
