Our Review

In ’00, the Thomas family purchased a run-down sheep farm in the Waipara Valley’s Omihi Hills, about an hour north of Christchurch. Penfolds viticulturist Nick Gill was approached to establish the 33ha vineyard and winery on the property’s greystone-based soils, and to later hire winemaker Dom Maxwell, who initially came on board as a vineyard-hand in ’04 but was swiftly promoted after Nick’s original pick for the job fell through. Nick and Dom still work together in their respective roles as viticulturist/general manager and winemaker at Greystone over two decades later. They are behind the brand’s reputation for sustainability and innovation. The wines are crafted mainly from certified-organic, estate-grown fruit, and many employ interesting winemaking techniques, including Dom’s pioneering ‘vineyard fermentation’ method. -ANNA WEBSTER
