Kabina Distilling in Melbourne is a producer of modern Australian rakija, the term used in the Balkan region for fruit-based spirits, therefore a type of brandy. And while traditional rakija (also called rakia, raki, slivovitz or tsipouro depending on where you are) may be made from a variety of fruits such as plums, pears or berries, Kabina focuses on single-vineyard shiraz grapes as its raw ingredient, making its products essentially Balkan-Australian versions of grappa or pisco. The big difference is that, unlike pisco, rakija may be matured in oak, and unlike grappa, may be infused with additional flavours after distillation. Kabina’s rakija is also made from a distillation of Australian shiraz-based wine, rather than grape must left over from winemaking. Kabina make a point of not using skins and stems for a cleaner style than the traditional backyard hooch ubiquitous around the Balkans and among Balkan diaspora communities. The name Kabina means 'cabin' in Croatian (and several other Balkan languages) – a reference to the back shed used for late-night gatherings fuelled by rakija, and also the location of many home winemaking and distillation setups. Kabina produces two ranges, the more affordable Ezevo and the more premium Kabina, each offering 40%, 47% and oak-infused versions.
