A clever move to push a citrus-dominant profile for non-alc; the fresher notes of the citrus bond well with the water, whereas those notes are often lost with alcohol. Punchy, weighted aroma clears up to bring a concentrated sage note. Overall it hits a deep lemon cordial character from the nose to the palate. There's a huge depth of flavour, which toes the line of being a bit too heavy, but a touch of acid keeps it balanced. The Australian citruses come through nicely; they have their distinct, bitter, eucalypt flavour – especially from the flingerlimes. The more traditional gin flavours are subdued, making this suitable for more citrus-forward drinks and mocktails.
