LARK Classic Cask Single Malt Whisky
Lark Classic Cask is the flagship single malt in the Lark range, matured entirely in first-filled 'sherry and port' (actually Australian apera and tawny) casks. Surprisingly subdued on the nose given those casks – you’d expect a bit more in the way of sweet fortified wine character. This is subtle and soft, with malt, orange zest and ANZAC biscuits, but overall not hugely giving in aroma, although opening up slightly with time in the glass. Good, chewy malt texture through the palate and easy finish of oak with a little fortified sweetness makes this an entirely inoffensive drinking experience. But there’s just not a huge amount going on here. I can’t find fault with this whisky, but it feels like it’s pulling its punches. I just want more of everything.
