Hellyers Road Distillery Dark Harmony Whisky

Experimental collaborations of this sort are really good fun, and I love that the Australian whisky industry and the Australian craft beer industry are playing well together because beer and whisky make such a great combination. This whisky was finished in a Doppelbock cask from Communion Brewing. Lots of chocolate comes bursting out of the glass here with a reasonable amount of struck match aggressiveness, but there’s some nice preserved cherry in there, too. It’s super drinkable with a sweet and easy yet light palate and well-controlled alcohol.
