Think warm hotcross buns, buttered raisin toast and a cosy spot on the couch. Winter-style gin cordials break the conventions of a typical gin, leaning away from juniper and the array of botanicals used to focus more on flavours found in baking or spiced spirits. It makes for interesting, heavily textural drinking, generous in flavour and comforting in nature. Including cayenne pepper in the botanical profile is a stroke of ingenuity, as it dries and lifts the gin, preventing it from becoming entrenched in sweeter, syrupy aspects. If drinking neat, allowing the gin to sit in the glass for a short while helps to bring the flavours into greater focus. What begins as sweet baking spice settles into more specific flavours of sharp cloves and warmed ginger. It creates a more elevated experience for the product and a better overall drinking experience.
