Impressively, the nose retains a strong note of juniper, often lost in fruited/flavoured gins. The woody, oily element of the juniper is bolstered by the other bold, spiced botanicals. The fruity note of the pinot noir is the first thing you notice in the aroma, with rich strawberry coulis widening out into fresher berries and a hint of orchard fruit. The palate follows the harmony of the spice and fruit, creating a super lush texture and opening the palate, which coats the mouth before ebbing out to allow drier notes to make themselves known. The integration of flavours is absolutely excellent; within its unified profile, each botanical gets a moment to shine. Before the finish kicks in, hints of minty menthol, licorice and baked citrus are all showcased. On the finish, the warming flavours of pepperberry help to draw everything out.
