The base product of a gin is fundamental in the distillation process, but is rarely employed in such a specific way. Using Barossa Valley red wine explicitly starts this gin's story at ground zero. With dried red fruits, currants and a baked ester note, as a result of a very hands-on level of neutral spirit production, the spirit gives a bold, robust aroma. The fruity quality continues onto the palate, turning into more fresh ripe strawberries and red plums. The dry botanicals begin to make themselves known towards the back, with hints of arid cinnamon and baking spices. Juniper is not hugely present throughout; however, traces are found in pockets of peppery pine notes and a hint of sharpness on the finish.
