'Sour Mash' refers to the way most American bourbon producers make their whisky – using a small portion of the previous batch’s mash (the grain slurry that gets fermented and distilled), and adding it to the new batch, much as you would with a sourdough starter. For Robbers Dog Sour Mash Moonshine, they’ve employed that traditional approach to fermenting corn for this aged Moonshine, which has been matured in an American oak, ex-Barossa shiraz barrel. Bourbon lovers will immediately recognise that American oak character on the nose and, for such a young spirit, it’s very clean, with notes of baked apples and cherry pie. Light, clean and sweet on the palate, this would be a good local option for folks who enjoy very light corn whiskies like Canadian Club.
