Blackwattle Distilling Co Imperial Dry Gin

Blackwattle Distilling Co using both the heads and tails of its other gins to create a new product is an ambitious project. The decision to include additional botanicals facilitates a spirit that is both different enough from its original parts and helps to create a more uniform profile than simply redistilling the discarded elements of a spirit. Grapefruit, in particular, works really well in this gin to soften the harsher notes and reintroduce some citrus elements that are not typically present in the head and tails portions of distillation. The palate is surprisingly supple, with a creamy, oily note from the rosemary coming forward. This gin shows unexpected balance and control and offers a pleasant, warm, herbaceous profile, leaning into the charm of woodsy rosemary.
