Cape Byron Distillery Brookie's Byron Slow Gin

While 'slow' gin is not an official gin category, this lovely gin cordial pays homage to the much-loved 'sloe' gin style. In a nod to the style's distinctive plum flavours, Brookie's Slow utilises Davidson Plums to recreate the style. The plums themselves, native to the Byron and the surrounding area, are fruits naturally low in residual sugars, making them tarter than a typical plum. The months-long steeping process, coupled with the lower sugar content, means that while the gin develops the concentrated fruit flavour, it doesn't overwhelm the gin itself. Rhubarb and an earthy hibiscus are encapsulated in this gin. There is also a subtle note of strawberry, minty eucalyptuses, and the underlying dry gin base.
