St Regis is a family-run boutique winery focusing on estate-grown shiraz, chardonnay and pinot noir. Each year the harvest is hand-picked by members of the family and friends, with Peter Nicol (assisted by wife Viv) the executive, onsite winemaker. While Peter has a technical background in horticulture, he is a self-taught winemaker, and has taught himself well, also making wines for others.
